Today's food is called

"Jokbal"

족발

or Braised Pig's Feet/Trotters

in English.

 

This dish is one of favorite

Yasik (night time snack) of Koreans.

Jokbal, looks similar as Suyuk or Bossam, except that Jokbal has skins attached.

 

Compared to Bossam, Jokbal has

pig's skin attached on the meat,

whereas for Bossam only meat

(muscles and fats) is used. 

 

Also, picnic shoulder is preferred

part to be used for Jokbal because

of higher fat and cartilage contents.

This gives Jokbal its chewy texture.

 

Jokbal is made by braising pig's feet

in a savory sauce of ginger, garlic and

soy sauce to name a few. Adding Doenjang

(Korean fermented soybean paste) and

cooking wine a bit will help remove

unpleasant smell, but originally it was

made just using a special or traditional

soy sauce.

This soy sauce is called Joseon soy

sauce. It is made in a conventional

way by fermenting soy beans

naturally, it was said that a seed sauce

that was older than 30 years old

was originally used, which gave its

special fragrance and taste that was

non-comparable to any other kind.

 

Pig’s feet is glazed in a soy sauce

with ginger and garlic, and onions and

served off the bone and thinly sliced.

Jokbal set menu usually includes

Makguksu (Buckwheat noodles).

With the changing of taste,

also popular is a spicy version of this

dish. BulJokbal or Fiery Jokbal is

super spicy. It's preparation method

is similar except one extra step is

added. After the meat is braised,

it is grilled with a special spicy

sauce made of a mixture of Gochujang

(Korean red chili paste), Gochugaru

(Korean red chili powder), soy sauce,

sugar or syrup, and chopped garlic.

Also there is a version with cheese

as well.

MAIN INGREDIENTS

The single main ingredient is

pig's feet and for the braising sauce

a mixture of soy sauce, garlic, ginger,

onions are used.

Similar to Suyuk, Jokbal is also high in

proteins and fats but not to the

same extent for fats. Jokbal is actually

lower in Calories because it has lower

fat contents than Suyuk. Jokbal

is also more moist than Suyuk,

meaning water contributes

more to weight, hence less Calories.

 

For a balanced diet, it would be

best to consume it with some

vegetables and trim visible fats

before eating. Nutritionally speaking,

it has about 2.5 times higher Calcium

(~16mg) than Suyuk and it is said

that the high gelatin content

of Jokbal helps to maintain

a healthy and youthful complexion.
