Today's food is called

"Ppeyodagwi Haejangguk," 

뼈다귀 해장국

or Pork Backbone Hangover Soup in

English. It is a hearty soup that people

usually eat after drinking alcohols,

as a remedy for hangovers.

There are several kinds of hangover

soups that are popular in Korea,

such as Ugeoji (Dried cabbage),

Seonji (Blood cake),

and Hwangtae (Dried pollack).

(Postings to be added near future).

 

Among these, Ppeyodagwi is

definitely the most popular one.

There are even restaurants that sell

only this soup as their specialty

that open 24/7.

 

MAIN INGREDIENTS

The two major ingredients of this

soup are pork backbones with meat

attached and napa cabbage.

 

The broth is made from boiling bones

for a long time, until all the marrow

comes out, giving it its deep flavor

as well as milky color

(before flavoring).

 

In addition to napa cabbage,

other vegetables such as soybean

sprouts, green onions and garlic

are common additions to this soup.

 

Major sauces and spices used are

Doenjang (fermented soybean paste),

Gochugaru (Korean red chili pepper

flakes) and Gochujang (Korean

red chili pepper paste).

NUTRITION OVERVIEW

The soup is very high in protein

(due to meat attached to the bones),

low in carbohydrates with

fairly high amount of fats

(mostly saturated fats from pork).

 

As Gguk is never eaten alone in the

Korean cuisine (Gguk and Bap

are served together)

some of the missing carbohydrates

can come from Bap. So it can be

a balanced meal that is very filling.

 

 It is also high in micronutrients.

Vitamins such as B vitamins

and Vitamin A and minerals

like zinc and iron are high.

 

Moreover, it is a great source of

electrolytes, which is helpful in

reducing unpleasant after-effects

of alcohols. The research suggests

electrolyte-rich drinks or soups

can also help people

maintain hydration.

 

Furthermore, high levels of of

B vitamins and zinc may also

help reducing the severity of

symptoms of a hangover.

BALANCED DIET TIPS

As Ppeyodagwi Haejangguk is high

in proteins and fats, it can be a very

satisfying meal as mentioned.

 

But this means Calories are also high.

So after having a Haejangguk,

try to have lighter meals

throughout the day.

 

Just to note, as it is high in saturated

fats, cholesterols and sodium,

it'd be best to remove visible fats

when eating the meat and consume

the liquid in moderation.

For example, leave out some of

the broth to reduce sodium intake.
